Fresh limes are juiced daily to provide the bright acidity that defines many of our cocktails, but the story doesn't end when the juice is squeezed. Instead of discarding the shells, they are transformed into the hull of our Ghost Ship garnish. An orange peel becomes the sail, creating a miniature ship that floats above the drink and gives new life to something that would otherwise become waste. The pandan used in the cocktail follows the same philosophy. The leaves are steeped to create our house-made pandan syrup, delivering its signature lightly grassy, toasted vanilla, and coconut aroma. Rather than using the leaves once and throwing them away, we continue to incorporate them throughout our beverage program as aromatic garnishes and decorative elements, allowing one ingredient to serve multiple purposes before its journey is complete.
