'Skinty Fia''Skinty Fia' is a "Mai tai" feeling sort of drink that is both a celebration of zero waste and supporting a traditionally made spirit which fits our ethos of contextualizing a world spirit, thoughtfully made, with our own fermentation program.
Here we have the left over lees from a tomato sake made with organic koshihikari rice co-fermented with organic early girl tomatoes at peak ripeness. We blended this mixture with unrefined organic cane sugar and country style barley miso that was further seasoned with
lacto-fermented wild strawberries fortified with HLCF marque from Hampden Estate. This was paired with a northern Haitian style of Clairin from "Le Rocher" that is made from cane juice syrup with added dunder from previous fermentations.
This drink sits incredibly refreshing, creamy without heaviness, and has an incredible aroma of red summer fruit from the fermented tomatoes. Strawberry is only added to season and bring out the natural "red fruit" quality of the fermented tomatoes.
