Tomato Tini
Our Tomato Martini is a celebration of our favorite summer fruit—and a perfect expression of the way our kitchen and bar work together to minimize waste. Delicate tomato water is collected from heirloom tomatoes, while the remaining pulp is infused into Haku Vodka. Tomato trim from the kitchen becomes a shrub, adding depth and a subtle touch of sweetness. Saline and fennel pollen bring it all into focus, finished with a few drops of pea pod–infused oil made from shells that would otherwise be discarded. Bright, savory, and layered, it captures the whole tomato—and our approach to using every ingredient with intention.
